Once your emery paper has taken out the scratches, polishing paper is what gets you from a clean satin surface to a high shine. This is 3M's WetorDry Tri-M-Ite, a high grit sandpaper on a fabric backing, and it comes in three colour-coded grits: pink 4000, blue 6000 and white/mint 8000.
Work through them in order, as each grit takes out the fine lines left by the one before. Change direction each time you move up a grit, so you can see exactly when the previous scratches have gone. By the time you've finished with the 8000 grit sandpaper, the metal is up to a high shine.
Use it dry for quick touch-ups at the bench, or dip it in water for a finer, cooler cut that won't clog as quickly. That's what makes it wet and dry sandpaper, and it's a big part of why the sheets last so long.
